Meet the three "Dusketeers"

HOW LONG HAVE YOU BEEN WITH DUSK?

I joined Dusk two years ago, having previously worked in a variety of different bars

WHY DID THEY GO FOR THE JOB?

I was looking for a new challenge and more responsibility. I wanted to progress from being behind the bar to learn more about the management side of things and the daily running of the business. Dusk presented the perfect opportunity and was the ideal next step.

WHAT DOES YOUR JOB ENTAIL?

I share the running of the bar with the other management staff, which includes admin, stock take, managing reservations and general bar upkeep. We are also responsible for arranging the logistics of our tailored bar hire service, Dusk away from Dusk, along with any in-house events we hold, such as spirit tastings or private parties.
 
WHAT DO YOU LOVE ABOUT IT?

My favourite part is definitely coming up with new ideas for drinks, and staying on top of new trends and products in the industry. We are constantly learning and trying new products on the market to develop new tastes and creations. There are endless opportunities when making a new drink. The flavour combinations are literally limitless  –  I love the creativity of it all. At times I feel like a mad scientist.

WHAT SKILLS DO YOU NEED TO BE A DUSKETEER?

An important Dusketeer trait is to be very hardworking; the job is a lot more than just pouring drinks.

We work in close quarters, which means you need to be able to get along with each other, even though we definitely act like a big squabbling family most days. We are an open bunch, and if I get on anyone’s nerves they have no problem letting me know.

DO YOU HAVE A FAVOURITE COCKTAIL?

It’s too hard to pick just one. I definitely love the classics, perfect in their simplicity; Martinis, Old Fashioned, Daiquiris – can’t beat the combination of rum, lime and sugar.

HOW LONG HAVE YOU BEEN WITH DUSK?

I have been with Dusk for just over four years. Where has the time gone?
 
WHAT EXPERIENCE DID YOU HAVE IN MIXOLOGY WHEN YOU APPLIED?

I had a fairly limited knowledge or experience with cocktails before moving to Dusk. I was keen to learn what I could, but there wasn’t much support or access to training at my previous job. With Dusk, we are given regular training nights, whether it is learning about new wines, spirits or teaching other members of the team the techniques and tricks to make the perfect cocktail.
 
WHAT ARE THE CHALLENGES?

The late hours can be a challenge. You end up working the opposite side to everyone with a nine-to-five job, which can make it difficult to keep in touch and see those who work throughout the day. However, the benefits and aspects I enjoy about my job far outweigh the late hours, and it is easy enough to get into the different routine.
 
DO YOU HAVE A FAVOURITE COCKTAIL?

My favourite cocktail would have to be an Aviation #2. Its gin, maraschino, lemon juice and sugar served straight up with a brandied cherry. Delicious.

HOW LONG HAVE YOU BEEN WITH DUSK?

I joined Dusk nine months ago, which has absolutely flown by.

WHAT DOES YOUR JOB ENTAIL?

As a supervisor, I work closely with the management team and assist with the day-to-day running of the bar, learning (a little) from and having a laugh with both Ricky and Jonny, maintaining standards, creating new cocktails and hosting mixology classes or spirit-tasting nights. Whenever we have a Dusk away from Dusk event to organise, I assist with preparing our pop-up bar and sometimes attend the event, offering guests the same high-standard service they would receive in the bar.
 
DO YOU HAVE A FAVOURITE COCKTAIL?

My cocktail of the moment is Pete’s Word, a twist on the classic Last Word created by Phil Ward from Death & Co. The gin is replaced with Laphroaig whisky, which is shaken with maraschino liqueur, Green Chartreuse and fresh lime juice.
 
WHAT SETS YOU APART FROM OTHER BARTENDERS?

We stand out among other bars and bartenders as none of us see our work as just a job to pay the bills. We are all fully invested in the industry and get involved with what’s going on. We have been working with each other for longer than your general bar, as no one wants to leave. We all get on like a family, a dysfunctional family, but a family nonetheless.
