Pippa Cortis and Ashleigh Foster spent three years at NESCol, working their way through the college’s Professional Cookery courses, from Introduction to Advanced.
They are now heading off in different directions to continue their journeys into professional cooking careers and both are grateful to the college for helping them progress.
During her three years on the course, Ashleigh has travelled to China to give cooking demonstrations at a seafood exhibition and also to Edinburgh with the college’s catering company Aramark.
Ashleigh said: “Everything we’ve learnt from the lecturers has been invaluable. Obviously, you learn the curriculum, but you are constantly learning extra things from people with first-hand experience. The opportunities you get are amazing. If you are willing to listen, the lecturers are willing to share.”
Pippa explained how working in one of the College’s fine dining training restaurants was invaluable to their learning experience. She said, “Professional Cookery students get to work in the College’s training restaurant, serving members of the public. You learn about working in a professional environment and, in third year, you really start to think about speed, technical skills and precision. College has really expanded our skills.”
