The world of professional cookery is exciting, demanding and fast paced.
Despite the long hours and hard work that characterises the industry, students and lecturers at North East Scotland College (NESCol) all have one thing in common – a passion for food and excellence in the kitchen.
Here, we take a look at the courses available for those wanting to enter the hospitality world.
NESCol can cater for you, whatever your level of experience within the hospitality industry. We offer courses for those who have little or no knowledge of cookery, for those with some experience and for individuals who wish to refine and develop their skill set at the highest level.
With large industrial training kitchens at both campuses, students are taught in a real world environment by lecturers with years of industry experience behind them. Gate 63 and the Wallace restaurant are the College training restaurants. They are open to members of the public, and are where students learn to perfect the art of hospitality and all that front of house entails.

FOR THE BEGINNER
An introductory course is available at both campuses and is designed for new entrants into the industry – those that perhaps have the passion but lack the experience. The course is designed to develop practical skills, knowledge and understanding required for employment or further study. You will be introduced to the preparation and production of simple dishes plus learn the importance of working effectively as part of a team.
ENTRY REQUIREMENTS: Two passes at National 4 or equivalent or relevant work experience/qualifications.
FOR THOSE WITH SOME EXPERIENCE
Created as an intermediate level the Professional Cookery course is designed for those who wish to build and strengthen existing skills to develop and refine culinary techniques. Here you will be introduced to more advanced dishes while covering kitchen operations, costs and menu planning and health, hygiene and safety.
ENTRY REQUIREMENTS: Minimum of National 4 qualifications or equivalent, successful completion of introductory course or relevant work experience/qualifications.
FOR THE ADVANCED STUDENT
The Professional Cookery Level 6 course is our advanced programme. Here you will prepare and produce an exciting range of complex dishes – perfecting culinary skills and techniques – ready for entering the workplace and as confident and able professional.
ENTRY REQUIREMENTS: Completion of Professional Cookery course or equivalent or for individuals who have a lot of industry experience.
The courses provide a seamless progression for those who wish to build their skill set and experience one step at a time.
