We’re looking for a dynamic and passionate Pastry Chef to be part of this once in a life time reopening in the centre of Glasgow.
Mackintosh at The Willow is set to open on 7th June 2018 following a £10m exacting restoration of the original Willow Tea Rooms Building on Glasgow’s Sauchiehall Street. Completed in 1903, Charles Rennie Mackintosh, Glasgow’s most famous architect, created one of his most iconic buildings designing every detail from the architecture down to the cutlery and crockery. We’ll be re-opening with 200 covers, split across 4 tea rooms to Mackintosh’s original designs plus now featuring a state of the art visitor centre with meeting facilities in the adjacent building. In its day this was a thoroughly modern social enterprise venture and this remains our attitude and guiding light as we seek to restore its rightful place at the very heart of Glasgow’s social scene.
Having gone to such lengths to recreate the historic interiors it’s only natural that we should look to pair that with classical Scottish and European cuisine. Our classics however will be modern day interpretations conjuring the flavours and combinations from the turn of the 20th Century. As you’d expect we fixate over all things brunch, finding excuses for “Elevenses”, serious about light lunches but most of all exacting purveyors of Afternoon and High Teas. We’re far from stuffy, we want a serious sense of adventure and of course humour in all that we do. Initially we’ll operate our all day dining facility from 9am-6pm, 7 days a week, but in time we’ll look to extend this further.
As Head Pastry Chef you’ll be heading up a small team in the pastry section working closely with the Head Chef to create modern day re-interpretations.
One minute you’ll be whisking up a Sachertorte and the next you’ll be inspiring a young brigade made up in part by trainees from our partners The Prince’s Trust. We very much therefore need you to be a people person, someone who has the patience and commitment to bring out the best. This is a job that will make a real difference and we want everyone to buy into our culture and not just the food.
Skills / Experience
The successful Head Pastry Chef candidate will have:
- Gained experience within quality establishments, preferably rosetted, and held senior responsibility within the pastry department.
- A passion and love for the classics and patisserie, this is an absolute expectation.
We’ve talked about the people leadership skills but we also want the management experience that can write and cost menus, control budgets, achieve targets and demonstrate the highest of food hygiene and HACCP standards.
