5 Red star hotel with 34 Bedrooms + Suites

45 cover (3 rosettes) restaurant.
Informal Dining (Bistro Style menu)

A brigade of 10 chefs.

The Sous chef should have a consistent and proven cooking history in high quality 3 Rosette or Michelin establishments, able to demonstrate strong leadership qualities. Supporting and leading a team of 10 chefs, you will be responsible for all kitchen operations in the absence of the Head Chef.

The Sous Chef will have a love for ingredients and fresh food able, knowledgeable to Michelin accolade requirements and the hunger for development, pushing the business and inspiring a young brigade of chefs

Other Sous chef responsibilities include:

·Leading/supporting the kitchen staff, training and development

·Liaising with local suppliers to source fresh ingredients

·Menu development, design and tasting

·All health and safety responsibilities including HACCP

·All ordering, wastage management and control of stock

With the Hotel situated on its own island, there is an abundance of foraging opportunities, with a 1/1/1 menu available. Ingredients are sourced from the hotels gardens and the island with additions from local suppliers. The kitchen has its own gardens, gardeners, foragers, smoke house, green houses and many more self-contained ingredient sources.

Accommodation is a private ensuite bedroom with shared kitchen, living area (Between two- just like flat sharing) charged at only £55 per week including FREE WI-FI and NO BILLS!!!
