Assistant Restaurant Duty Manager

£23,100.00 per annum plus a share of the staff gratuities

Prestonfield, one of Scotland’s leading and highly individual Five Red Star hotels seeks a skilled and passionate Assistant Restaurant Duty Manager to further develop the already high and award-winning standards of its destination restaurant Rhubarb and Private Dining at Prestonfield.

Main Duties include

  • Hosting - Meet, seat, greet, and bid farewell to all guests.
  • Payment handling including redeeming deposits and credit card handling.
  • Operating Till system.
  • Stock control – stock taking of coffees, crockery etc.
  • Ensure optimum covers and sales are reached - manage the turnaround of sittings working with dedicated events and reservation team
  • Ensure smooth and efficient service is maintained.
  • Liaison with other departments as required.
  • Food and drink service.
  • Work to budgeted staff costs.
  • Assist with input to Forth Hospitality time sheets and rota.
  • Maintain building security – opening and closing of restaurant.

    Candidate Specifications

    Applicants for this role are likely to have a five star hotel background or be able to demonstrate strong and successful management experience in a fine dining restaurant.

    You will be able to manage, motive and develop your team with a hands-on approach ensuring that guest’s expectations are constantly met & frequently exceeded. A passion for fine food and wine and an ability to articulate this to your team and guests is essential.

    The successful applicant should have attention to detail, polite demeanour, neat appearance and an excellent grasp of written and spoken English is essential
